Water comes in, and we take out the dirt, then the hardness that furs up your boilers and dish machine, then the chlorine that gets into the coffee. The espresso line gets a filter of its own, and the soda machine gets the safety valve inspectors look for. You end up with clear ice, coffee that tastes the same every day, and equipment that stops dying early.

Why does a café or restaurant need water filtration?

Because one water problem hits your ice, your coffee and your dish machine. Hardness scales boilers and steamers, chlorine flattens coffee, and sediment clouds ice. How much does restaurant water filtration cost?

The panel, plus a separate reading at the coffee line, is $250 to $450. Fitting runs $1,500 for a single ice machine filter head up to $12,000 for espresso, combi oven, dish machine and carbonator together. Cartridges and service run $600 to $2,400 a year.

How often should restaurant filter cartridges be changed?

On volume, not on a calendar guess — for most positions that works out at about every six months. Cartridges are 85 to 95 percent of what a foodservice operator spends on filtration, so changing them on use rather than habit is where the savings are.

How often does backflow testing have to be done in Massachusetts?
